Join Dean Erdmann, a German-Certified Master Chef with more than 30 years of leadership experience in the hospitality and food service industry, for a guided tour through six unique kitchens, the Mixology lab, and student common spaces. The Walt Disney World Center for Culinary Arts and Hospitality features a dual campus concept, industry partnerships and collaboration, and unique spaces to facilitate this amazing program. A Q&A session will follow the tour. Lunch provided.

Sustainability in Auxiliary Services
Partnering to Imagine Renovations & New Construction Designed to Engage

In this extended learning pre-conference session learn about how three campuses promote sustainability within their auxiliary operations. This session will look at sustainability within parking, dining, and housing operations. Breakfast provided.

UTA: University of Texas at Arlington Parking & Transportation Department (PATS) utilizes a
strategic approach to revolutionizing campus transportation and parking services. This session will highlight partnerships with faculty researchers and industry leaders that have allowed PATS to embark on several pioneering initiatives, including the nations longest-running self-driving shuttle program, the integration of recycled plastics into asphalt for enhanced parking lot durability, and the launch of an AI-enabled parking finder app. These partnerships have driven significant advancements in campus operations, setting new benchmarks for efficiency, sustainability, and student satisfaction. Strategies, challenges, and successes of these projects will be discussed, offering valuable perspectives for professionals aiming to innovate in campus operations.

UNT: From opening the first all-vegan dining hall on a college campus in 2011 to the inception of their hydroponic garden, Mean Green Acres in 2016, find out about the present and future of sustainability at the University of North Texas Dining Services.

UTSA: The interest in LEED within building construction is growing every year. Unfortunately, the awareness of the benefits and the expectations of the LEED certification that are led by a few during construction are not transferred to the ongoing management and team after the building receives the honor. This deficit of information hinders the benefits of LEED once the building has been completed. The best of intentions during design and construction is lost from a transfer of information. Explore strategies to encourage partnerships during the construction process that will help transfer the information to the management team and staffing that will support the sustainability of the building.
