The first initiative of NextGen Dining is the Plant-Rich Program! NACAS’s Plant-Rich Program connects colleges and universities with the expertise, partners, and solutions to incorporate plant-rich menus in campus dining. The program empowers institutions to create menus that students love — advancing healthy, nutritious, sustainable, and culturally inclusive foods while boosting financial success.

 By putting the emphasis on adding vegetables, legumes, whole grains, nuts, seeds, and vegetable protein, Plant-Rich Menus bring tasty, satisfying, sustainable, inclusive, healthy, and culturally diverse menus to your campus. ​

 Through the Plant-Rich Program, NACAS empowers institutions by:

  • building the right connections with solution providers and peer leaders,​
  • facilitating knowledge sharing, and
  • celebrating every step of progress along the way.

 We’ve identified five essential levers for successful menu change, and the Plant-Rich Program adapts to each institution’s unique needs — connecting them to the right expertise, partners, and solutions at every stage of their journey.
