NextGen Dining reimagines campus dining as a catalyst for student satisfaction, financial strength, and dining success - with menus that students love, meals that are nutritious and operationally efficient to serve, while also being good for the planet.This is why the first initiative of NextGen Dining is the Plant-Rich Program. By putting the emphasis on adding vegetables,legumes, whole grains, nuts, seeds, and vegetable protein, Plant-Rich Menus bring tasty, satisfying, inclusive, affordable,healthy, and culturally diverse menus to your campus. ​

Through the Plant-Rich Program, NACAS empowers institutions by:

  • providing hands-on operational support to help campuses confidently scale plant-rich dining,​
  • meeting each institution where they are on their journey,​
  • building the right connections with solution providers and peer leaders, and​
  • facilitating knowledge sharing and celebrating every step of progress along the way.

Expect practical tools, on-the-ground support, and access to proven resources and insights across the key levers needed to drive this transition.
We’ve identified five essential levers for successful menu change, and the Plant-Rich Program adapts to each institution’s unique needs — connecting them to the right expertise, partners, and solutions at every stage of their journey.
